Use a paper towel to pull off the membrane.
Apply rub liberally to both sides for big flavour
Grill on indirect medium-low heat at 250-325⁰F (121-163⁰C) for 2-3 hours or until tender.
Combine apple cider vinegar, apple juice and spices to make a mop sauce.
Apply mop sauce while grilling to keep moist.
