Remove most of the fat from the outside of the pork butt leaving a thin layer on top.
Apply the rub liberally to all sides for big flavour.
Grill on indirect medium-low heat at 250-325⁰F (121-163⁰C) for 6 hours or until internal temp is 165⁰F (74⁰C).
Wrap pork in foil.
Grill for another 1-2 hours until internal temp is 195-200⁰F (90-93⁰C).
Use forks to pull apart tender pork into shredded deliciousness.
