A full-bodied aroma with a pungent & savoury flavour. Garlic is the bulb of Allium sativum, a member of the lily family. It is a hardy perennial with long flat leaves and purple flowers, forming the bulb at the root end. The segments of the bulb are “cloves” of Garlic.

Garlic powder.
When dehydrating garlic to create powder, it is heated to a temperature of between 150° and 160 °C (300-320°F), causing a more subtle flavour to take shape. The water is removed to a moisture content of about 6.5%. The dehydrated garlic is then further sliced, chopped, or minced until the powder is reduced to the desired particle size.
Whole garlic has a pungent, spicy flavour while garlic powder is more mellow and sweet.
