Place large cast iron skillet on preheated grill over medium heat (350°F to 375°F). Heat oil in skillet. Add onions and garlic; cook and stir 5 minutes until softened.
Stir in BBQ Sauce, water, ketchup, brown sugar, mustard and paprika. Add jackfruit. Cook 8 to 10 minutes, stirring occasionally, until sauce has thickened slightly and jackfruit is tender.
Shred jackfruit in skillet; mix well to coat evenly with sauce.
Serve about 1/2 cup BBQ Jackfruit on each roll, topped with 1/4 cup coleslaw and sliced avocado. Top will additional BBQ Sauce, if desired.
